NHS Grampian’s Central Catering Department operates a cookchill catering facility. Food is prepared in advance, then it’s portioned into oven-ready containers and blast-chilled to preserve the goodness and flavour.

Its catering team is based at Dr Gray’s hospital in Elgin, North East Scotland. Responsible for NHS patient and staff catering, they work extremely hard to ensure 2,000 meals+ a day are provided for 17 community hospitals, plus 20 outside contracts.

Meals are provided for hospitals such as Dr Gray’s, Fraserburgh and Inverurie. Additional contracts include local government work such as nursing homes, sheltered housing and various other specialist care units. Different elements, including dietary needs, portion control, nutritional requirements, taste appeal, patients’ medical and cultural needs are factored in too.

Area Catering Manager Ruaraidh MacKinnon is responsible for the smooth running of the busy catering facility, ensuring the highest quality of service and food provision is delivered at all times. Explains Ruaraidh “The sheer volume is immense. In addition to the meals, we process trays of vegetables, potatoes and puddings too,” adding “that’s why it’s vital we have the right machines to finish the work on time.”

In March 2013, one of the two 18 year old tray sealing machines broke down and a ‘like for like’ replacement was immediately sourced. States Ruaraidh, “None of the other suppliers could meet our needs, however KernPack  had the exact match we were looking for, which meant we could use our existing packaging containers without having to change everything.”

NHS Grampian hit the ground running with Kern’s semi-automatic Olympia H250 tray sealing machine. This compact, simple to use and easy to maintain system, capable of packaging in a modified atmosphere also conforms to stringent hygiene requirements. Its strong stainless steel structure is built to last giving peace of mind to production teams and ensures return on investment. “The installation process delivered by Kern’s engineers was seamless, our production continued as normal and it couldn’t have been a smoother experience. In May 2014, their 2nd 19 year old machine failed and so Kern was pleased when NHS Grampian asked KernPack to supply them with another new system.
